Chateau Filhot has 60 hectares of vineyards, planted with 60% Semillon, 36% Sauvignon Blanc, and 4% Muscadelle. Chateau Filhot has an ideal microclimate for developing the noble rot on the grapes. Only the best grapes are selected and yields are very low as a result, somewhere between 10 and 20 hectolitres per hectare depending on the vintage. This high proportion of Sauvignon and the refusal to use any new oak gives Filhot a fruitier, more aromatic quality than some of the bigger-boned Sauternes. Drinking beautifully now but will keep at least another five or six years.
